Chef Paddy Started his professional career with the Taj group of hotels in India in the Year 1988 after graduating from the Institute of Hotel Management (IHMCT & AN), Hyderabad.
He then worked through all their basic and specialty kitchens for four years before graduating to be a chef at their 24 hour Restaurant the “Southern Comfort” (Now refurbished and renamed Café Mozaic).
In between these formative years he also trained at their premium Properties – The Taj Mahal Bombay and The Taj Bengal.
In 1992, he left for the Taj Group to explore and further his culinary skills and joined the Royal Caribbean Cruise lines as an assistant Chef. Working with Chefs from across the World and rubbing shoulders with the best chefs helped him in honing his skills in World Cuisine.
After having worked with luxury cruise majors for seven years he got bitten by the entrepreneurial bug in 2000 and setup Herbs and Spices in that very year at Whitefield .
So in effect he has over three decades of experience in the Food and Beverage business.
